Sandwiches and wrap recipes - Magic Tofu Wrap

4 12-inch whole wheat tortillas
1 batch House Mayo (see p. 103)
1 batch Crispy Tofu Coating (see p. 87)
1 batch Marinated Tofu Steaks (see p. 90)
1 pack alfalfa sprouts
2 cups grated carrot
2 cups lettuce
1/4 red onion
2 tomatoes, diced
1/2 English cucumber, diced
4 tbsp. olive oil

1. Heat olive oil in frying pan over medium heat.
2. Dredge Tofu Steaks in Crispy Tofu Coating and cook in pan until browned on both sides. Set aside.
3. Heat tortillas on a grill or in the oven.
4. Top with a quarter of the ingredients; then fold in edges and roll up.
5. Repeat for each serving.
Serves 4
