Sauce and Marinade Recipes - Sri Lankan Spice Mix

1 tbsp. cumin seeds
1 tbsp. fennel seeds
1 1/2 tsp. cardamom seeds
8 tbsp. coriander seeds
1 tbsp. turmeric powder
4 tbsp. chili powder
1 tbsp. garlic powder
1 tsp. cinnamon
1 tsp. black peppercorns

1. In a dry pan, toast the fi rst four ingredients over low heat until they have slightly darkened and start to
smell fragrant.
2. Add remaining ingredients to pan and toast for a minute or so until the powders change colour slightly.
Be careful not to burn.
3. Remove from heat, let cool and then grind in spice grinder.
Makes 4 servings
