Salad recipes - Mega Caesar Salad

4 cups torn romaine lettuce
1/4 cup croutons
1 serving Creamy Caesar Dressing (see p. 82)
1 cup grated carrot
1/2 pack alfalfa sprouts
6 cubes Marinated Tofu (see p. 90)
2 tbsp. sunfl ower seeds, toasted
6 cucumber slices
6 green pepper slices
6 Kalamata olives

1. Toss romaine lettuce and croutons in Creamy Caesar Dressing and place in a large salad bowl.
2. Arrange grated carrot around the edge of the bowl and form a ring of alfalfa sprouts in the centre. Place
tofu cubes in the middle. Sprinkle sunfl ower seeds on the tofu cubes.
3. Arrange the cucumber, green pepper and olives around the top of the salad. Garnish with a wedge of
lemon and serve.
