Spreads and Filling Recipes - Herb Tofu Mayo

2 cups fi rm tofu
1 clove garlic, minced
1 tbsp. apple cider vinegar
1 tsp. Dijon mustard
1 tsp. sea salt
1/2 tsp. ground white pepper
1/4 cup fi ltered water
1 tbsp. sunfl ower oil
3 tbsp. Mixed Dry Herbs

1. In a food processor, whiz the tofu, garlic and apple cider vinegar until smooth. Scrape down the sides of
the bowl.
2. Add remaining ingredients and process until smooth, scraping down the sides of the bowl periodically.
Makes 6 servings
