Sauce and Marinade Recipes - Coconut Curry Sauce

3 tbsp. sunfl ower oil
1 onion, peeled and chopped
2 cloves garlic
1/2 tsp. cumin, ground
3/4 tsp. sea salt
3 tbsp. curry powder
3 tbsp. spelt fl our
3 cups Vegetable Stock
2 cups coconut milk
3 large tomatoes, diced

1. Heat the sunfl ower oil in a saucepan over medium heat.
2. Add the onion and garlic. Cook for 5 minutes until soft.
3. Add spices and cook for 1 minute.
4. Add fl our and cook for 1 minute.
5. Stir in the Vegetable Stock gradually to prevent lumps forming.
6. Add the coconut and tomatoes, stirring occasionally.
7. Simmer for half an hour.
Makes 6 servings
