Sandwiches and wrap recipes - Black Bean Burrito

Ingredients:
4 12-inch whole wheat tortillas
2 tomatoes, diced
1 bunch cilantro, chopped
1/2 cucumber, chopped
1/2 red onion, peeled and chopped
2 cups shredded lettuce
1 batch Black Bean Filling heated
2 avocados, sliced


Procedures:
1. Heat tortillas on a grill or in the oven.
2. Toss the diced tomato, cilantro, cucumber, red onion and lettuce together in a small mixing bowl.
3. Spread a thick layer of warm Black Bean Filling across the centre of one tortilla. Spoon on a portion of
the tomato mixture. Top with avocado slices.
4. Roll the tortilla, tucking in the two ends as you go. Repeat for each serving.
Serves 4
